Update Minio and mc version (#12364)

- Add separate headless service for distributed mode - Remove unused config fields from value file - Fix the situation where persistence.enabled was ignored by statefulset Fixes https://github.com/minio/minio/issues/7327 Signed-off-by: Nitish Tiwari <nitish@minio.io>
